Delicious Smokey Barbecue Sauce

This delicious Smokey Barbecue Sauce is great to brush on vegetables after they are cooked on the grill.

Starting the Sauce
 1 red onion, diced
 4 cloves garlic, finely chopped
 1 tablespoon ground cumin
 1 tablespoon smoked paprika
 1 ½ tablespoons onion powder
 ½ cup vegetable stock
 2 cups tomatoes, diced (sweeter preferred)
Finishing the Sauce
 ½ cup tomato paste
 ½ cup date paste
 1 ½ tablespoon wholegrain mustard
 3 tablespoon apple cider vinegar
 ¼ teaspoon liquid smoke
 ½ teaspoon freshly ground black pepper
 ½ teaspoon Himalayan Salt (Optional)

Starting the Sauce

To start the sauce, bring a small sauce pot to medium–high heat and add the onion. When the onions begin to cook, add the garlic, cumin, smoked paprika and onion powder. Stir well until the spices are lightly toasted.

Add the vegetable stock and tomatoes. Bring to a simmer and cook for 4 to 5 minutes

To finish the sauce, add the tomato paste, date paste, wholegrain mustard, vinegar, liquid smoke and pepper. Stir very well and reduce the heat to low. Cook gently with the lid on for an another 7 to 8 minutes on low heat.

Transfer to a food processor or stick blender, and blend mixture until your desired consistency.

Adjust the seasonings to taste.

If the dressing is to thick then you can thin with filtered water to your desired consistency.

Let cool, and store in a jar or container in the fridge.

When ready for use, brush on grilled vegetables or marinade your vegetable on the grill.
