Garlic Mushrooms

This Garlic mushrooms dish is great as a side dish or an addition to your pasta, salads and appetizers.

 ¼ cup shallot, finely chopped
 2 garlic cloves, finely chopped
 2 cup loosely packed wild mushrooms such as shimeji, chanterelle, oyster, king oyster, shitake, shitake, porcini etc.
 3 tablespoons madeira or marsala wine
 2 tablespoons fresh chives, minced
 Sea salt, to taste
 Freshly ground black pepper, to taste

This garlic mushrooms is a healthy oil-free dish which is cooked using a dry sautéing method and is a really quick dish to cook so make sure you prepare your mise en place and have all ingredients ready to go and easily accessible.

To cook this dish, bring a large fry pan to medium / high heat. Once hot, add the shallots and as soon as the shallots begin to brown add the garlic and cook for a few seconds then immediately add the mushrooms stir for a few seconds and then add the wine and deglaze the pan.

Sauté until the garlic mushrooms have released their liquid and once the pan has been fully deglazed and the liquid has evaporated (Typically 4-5 minutes), gently stir in the chives, season with sea salt and freshly ground black pepper, to taste and serve.
